Recipe(tried): It's Only Brocc 'n Bowl (Broccoli and Cheese Soup)
SoupsToday I am posting a family favourite, from the Looneyspoons cookbook. Hence the cornball title!
I have made this soooo many times, and have always meant to post it for y'all...it is the definitive broccoli cheese soup, full of flavour but low on fat, as all the Looneyspoons recipes are.
IT'S ONLY BROCC 'N BOWL

1 cup diced onion
1 clove garlic, minced
1/2 cup chopped celery
2 1/2 cups low-sodium, reduced fat chicken broth
3 cups broccoli florets, divided use*
1 cup peeled, cubed potatoes**
1/2 cup low-fat sour cream
3/4 cup shredded cheddar cheese
1/2 tsp ground thyme
1/2 tsp ground black pepper
1/2 tsp Worcestershire sauce
pinch salt
4 to 5 dashes hot pepper sauce
Saute onion, garlic and celery. Cook and stir until tender, about 5 minutes.
Add broth, 2 cups broccoli and all the potatoes. Bring to a boil. Reduce heat, cover and simmer 10-12 minutes until broccoli and potatoes are tender.
Steam reserved 1 cup broccoli until tender.
Puree soup, either with immersion blender (my choice) or transfer to counter top blender. Return to pot over low heat. Add reserved broccoli, sour cream, cheese, and remaining spices/flavourings. Stir until smooth and serve immediately.
NOTES:
*I never bother to steam the broccoli separately, I just toss it all in...
**I use frozen hash browns for the potatoes, I always have them on hand.
With this luscious soup, I will be serving stuffed veal (don't know what it is stuffed with, because it was from the freezer, already cooked...so we will get a surprise!), and a big ol' green salad.
A simple Monday night dinner, but a crowd pleaser!
