Recipe: Crispy Cinnamon-Chicken Bake (Weight Watchers recipe, 1980's)

1 tbsp. plus 1 tsp. vegetable oil
1/2 cup plus 2 tbsp. cornflake crumbs
1 tbsp. plus 1 tsp. brown sugar
2 tsp. ground cinnamon
2 tsp. grated orange peel
1/2 tsp. salt
1/2 cup buttermilk
3 lbs. chicken parts, skin removed
Preheat oven to 400 degrees F. Using oil, grease nonstick baking pan that is large enough to hold chicken in 1 layer.
In blender container combine cornflake crumbs, brown sugar, cinnamon, orange peel, and salt and process until well blended; pour mixture onto sheet of wax paper or paper plate.
Pour buttermilk into bowl; dip chicken parts into buttermilk, then coat with crumb mixture, pressing crumbs into chicken and being sure to use all of buttermilk and crumb mixture. Place coated chicken parts in a single layer in prepared baking pan.
Bake until tender, about 30 minutes.
Makes 6 servings
