CRUNCHY CABBAGE AND APPLE SLAW
FOR THE DRESSING:
1/4 cup seasoned rice vinegar
2 tablespoons dark sesame oil
1 tablespoon honey
1/2 teaspoon salt
2 teaspoons minced jalapeno or serrano pepper
FOR THE SALAD:
1 each Gala, Golden Delicious and Granny Smith apple, quartered, cored and thinly sliced
8 cups (about 1 1/2 pounds) thinly sliced Napa cabbage
1 red bell pepper, cut in thin strips
1/2 seedless English cucumber cut in thin strips
3 scallions, thinly sliced
3/4 cup coarsely chopped fresh cilantro
2 tablespoons toasted sesame seeds
1 container (about 3 ounces) radish sprouts
Whisk all ingredients for the dressing together, then toss in apple slices to coat.
Toss salad ingredients with dressing, except sprouts.
Add sprouts. Toss gently again. Serve right away or after chilling as long as 4 hours.
Makes 8 servings
