CREAMY CAESAR SALAD WITH SPICY CROUTONS
FOR THE DRESSING:
1 large garlic clove, halved
1/2 cup fat-free mayonnaise
2 tablespoons red-wine vinegar
2 teaspoons Dijon mustard
2 teaspoons white wine Worcestershire sauce
1 teaspoon anchovy paste
1/4 teaspoon black pepper
FOR THE SALAD:
2 bags (10-ounces each) torn romaine lettuce
1/3 cup grated fresh Parmesan cheese
Spicy Croutons (recipe follows)
Drop the garlic through the opening in a food processor with the processor on; process until minced. Add the mayonnaise and the next five ingredients; process until well-blended. Cover and chill at least 1 hour.
Combine the lettuce and dressing in a bowl; toss to coat. Sprinkle with the cheese; top with the Spicy Croutons.
SPICY CROUTONS
Yield: 2 cups
2 teaspoons olive oil
3/4 teaspoon Cajun seasoning
1 garlic clove, minced
2 cups (3/4-inch) cubed sourdough bread
Preheat the oven to 400 degrees F.
Combine the oil, Cajun seasoning and minced garlic in a microwave-safe bowl. Microwave on high for 20 seconds.
Add the bread cubes; toss gently to coat. Spread the bread cubes in a single layer on a baking sheet.
Bake at 400 degrees for 15 minutes or until lightly browned and dry.
Servings: 6
