Recipe: Crunchy Coating Mix for Chicken (using cornmeal, wheat germ and sesame seeds, 1980's)
Mixes and Food GiftsCRUNCHY COATING MIX
2/3 cup yellow cornmeal
1/2 cup grated Parmesan cheese
1/2 cup sesame seeds
1/2 cup wheat germ
4 teaspoons parsley flakes
4 teaspoons garlic powder
1 tablespoon thyme leaves
2 teaspoons sage
1 teaspoon salt
1 teaspoon ground black pepper
Shake ingredients together in a large plastic bag. Close tightly with a wire tie and store in refrigerator.
To use, dip chicken in beaten egg then roll in Crunchy Coating Mix; bake or fry as desired.
Makes about 2 1/2 cups
