Recipe: Crunchy Fish Fillets with Lemon (using mayonnaise and bread crumbs)

1 tablespoon butter (for the baking pan)
4 fresh white fish fillets (about 1 pound in all)
Salt and pepper (to taste)
2 tablespoons lemon juice
1/2 cup mayonnaise
1 cup Italian bread crumbs
1 tablespoon olive oil
Lemon wedges (for garnish)
Preheat the oven to 350 degrees F.
Grease a large baking pan with the butter. Arrange the fillets in the baking pan. Season them with salt and pepper and drizzle with lemon juice. Spread them with mayonnaise and top with bread crumbs. Drizzle with olive oil.
Bake for 10-12 minutes, depending on the thickness of the fillets. Test by inserting the tip of a knife into the fish. The fish should flake easily.
Garnish with lemon wedges and serve hot.
Makes 4 servings
