Recipe: Cuban Key Lime Chicken
Misc.CUBAN KEY LIME CHICKEN
4 to 4 1/2 pounds chicken pieces, skin removed
3 cloves garlic, peeled and crushed
1 teaspoon ground cumin
1 lemon, sliced, seeds removed
1/4 cup fresh Key lime juice
1/4 cup orange juice
1 cup thinly sliced white onion
1/4 cup olive oil for frying
1 (3 ounce) jar pimiento pieces
1 teaspoon coarsely ground black pepper
Salt to taste
Wash and pat dry chicken pieces with paper towels. Set aside.
Mix together garlic, cumin and lemon slices, lime and orange juice, then pour over chicken pieces. Cover pieces with onion rings and marinate for about 3 hours, or longer.
WHEN READY TO COOK:
Saute chicken slices in olive oil until golden brown.
Add pimento, then season with salt and pepper. Add marinated ingredients. Cook over medium high heat for about 5 minutes, then turn to simmer and cook for another 25-30 minutes, or until done.
Servings: 6-8
