Recipe: Curry Soup Mix

CURRY SOUP MIX

2 cups rice, uncooked
1/2 cup raisins
1/3 cup chopped walnuts
1/4 cup dried minced onion
2 tbsp salt
1 tbsp curry powder
1 tbsp sugar
2 tsp paprika
1 1/2 tsp dill weed
1 tsp dry mustard
1 tsp ground coriander
1 tsp garlic powder
1/2 tsp ground cardamom

Store in an airtight container in refrigerator.

TO MAKE SOUP:
Bring 10 cups water to boil in large stockpot over high heat; add soup mix. Cover and reduce heat to medium.

Stirring occasionally, simmer 20-25 minutes, until rice is tender.

Stir in 2 cups shredded cooked chicken or cooked peeled shrimp; cook until heated through. Serve immediately.
