Recipe: Bacardi Chicken Cut-Ups (baked, using orange juice, ginger and rum, 1970's)
Main Dishes - Chicken, PoultryBACARDI CHICKEN CUT-UPS
1/4 cup butter, melted
1/4 cup orange juice
1/4 cup Bacardi light rum*
1/2 tsp. grated orange rind
1/2 tsp. salt
1/8 tsp. ground ginger
1/8 tsp. ground black pepper
1 crushed garlic clove
1 (3 lb.) frying chicken, cut-up
Preheat oven to 350 degrees F.
Combine all liquids and seasonings. Brush chicken parts generously.
Arrange chicken pieces skin-side up in shallow baking pan, basting occasionally with remaining mixture.
Bake 1 hour or until golden and lender.
*Use 80 proof rum.
Makes 4 servings
