Recipe: Dinosaur Calzones
Pizza/FocacciaDINOSAUR CALZONES
1 pound ground beef or turkey
1/2 cup chopped onion
2/3 cup pizza sauce
5 cups complete baking mix (Bisquick)
3/4 cups water
3 tablespoons oil
1 cup shredded cheddar cheese
1 egg white, lightly beaten
Brown ground beef in a skillet, adding the onions when beef is almost browned. Cook until onions are soft and beef is no longer pink. Drain thoroughly; stir in pizza sauce and simmer one minute. Set aside.
In a large bowl, stir together biscuit mix, water and oil. Shape into a ball. Cut off and set aside 1/4 of the dough. Shape the remaining dough into a ball again; divide in half. On a foil-lined baking sheet, pat or roll each dough half into a 12-inch circle. Sprinkle half of the cheese over the top half of each circle. Spoon half of the meat mixture on each mound of cheese. Fold dough over filling to form a crescent, using a fork to press the edges together.
Make 14 (3/4-inch) balls from part of the reserved dough. Press 10 of the balls into triangle shapes. Press 5 triangles into sealed edge of each calzone for spikes on the backs of the dinosaurs. Shape the four balls into feet, using some of the egg white as glue. Roll and shape the remaining dough for a tail, neck and head, attaching with egg white. Brush top of each dinosaur with the egg white.
Bake in a 425-degree oven 15 to 20 minutes until golden brown. Let rest two to three minutes before slicing to serve.
Each Dinosaur makes 4 to 5 servings)
