Recipe: Rush-Hour Flatbread Pizza

Pizza/Focaccia
RUSH-HOUR FLATBREAD PIZZA

1 (10-to 12-inch) Boboli or focaccia flatbread
1 tbsp. olive oil
3 medium tomatoes, sliced
1/3 cup fresh basil leaves, shredded
1 cup shredded low-fat mozzarella cheese

Preheat oven to 450 degrees F.

Coat large baking sheet with nonstick spray. Place flatbread on baking sheet and brush with oil. Top with tomatoes, basil, and cheese.

Bake 20 minutes, or until flatbread is golden brown and cheese is bubbling.

Serves 6
