I use to make a lot of chocolate candy molds from Wilton or similar chocolate. If you don't have a double boiler just stick a saucepan with the chocolate in it in another pan with a few inches of warm water in it after your chocolate is melted.. You want it warm enough to keep it thin. It is best to melt the chocolate on the stove in a double broiler with the water just simmering. Then when melted turn off the heat but keep the pans together and the heat is enough to keep the chocolate the right consistency. Just DO NOT letter any water get in the chocolate it WILL ruin it.
