Recipe: Banana Pancakes (just eggs and banana, no flour)

Breakfast and Brunch
BANANA PANCAKES



1 extra-ripe banana
2 eggs
Maple syrup (for serving)

Mash banana with a fork. Whisk in eggs until smooth.

Cook in a greased skillet over medium-low heat about 2 minutes per side.

Serve with maple syrup.

OPTIONAL ADDITIONS:
Add chocolate chips or blueberries (but cut the blueberries in half first, or they'll separate from the batter while cooking).
