Recipe(tried): Do Ahead Breakfast Eggs - Variation

I loved this recipe; it was easy and quick to prepare. It was delicious that next day and even those leftovers were good one day after that, reheated in the microwave. I did add some crisp bacon to the eggs instead of mushrooms.
