DOREEN'S FROZEN FRUIT SALAD
1 (3 ounce) package softened cream cheese (OK to use light cream cheese, but don't use non-fat)
1/3 cup mayonnaise (OK to use light mayo, but don't use nonfat)
1 teaspoon lemon juice
1/3 cup sugar
1 cup heavy (whipping) cream
2/3 cup miniature marshmallows
1/4 cup drained mandarin orange slices
1 (1 pound) can fruit cocktail, drained (the kind with maraschino cherries in it)
2 tablespoons chopped pecans
Blend cheese, mayonnaise, lemon juice; set aside.
With electric mixer, beat whipping cream, adding in sugar, a tablespoon at a time, until stiff. Fold this mixture into cheese mixture. Fold in rest of ingredients.
Pour into 8-inch-square pan and cover with plastic wrap, then aluminum foil to seal. Freeze.
Before serving, thaw slightly, cut into squares and serve.
Makes a nice side salad with sliced baked ham or a summer lunch for certain dads.
Makes 6 to 8 servings
