Recipe(tried): Lime Jello Salad for Terry

Salads - Fruit, Gelatin
Sorry this isn't in time for your dinner this year. It isn't exactly like your recipe, but it's close enough you might be able to adapt it by substituting cream cheese for the cottage cheese.

LIME JELLO SALAD

1 (3 oz.) box lime gelatin
3/4 cup boiling water
1 cup evaporated milk
1 (8 oz.) can crushed pineapple, drained
1 tbsp. lemon juice
1 cup cottage cheese, mashed or blended to smooth
1/2 cup mayonnaise
1/2 cup chopped pecans
1/2 cup chopped celery

Dissolve gelatin in 3/4 cup boiling water. Cool slightly.

Add evaporated milk. Chill until partially set, stirring the mixture occasionally to keep smooth.

Stir in pineapple, lemon juice, cottage cheese, mayonnaise, pecans, and celery. Chill until firm.
