Starlight Mints was a national award winning cookie in the early 1950's. My mother cut out the recipe and saved it. The original mint was called "Rockwell Mints" which I don't believe can be found anymore. It makes a basic recipe for all kinds of regular chocolate chip or add Mint M&Ms.
STARLIGHT MINT COOKIES
3 cups flour
1 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1/2 cup brown sugar
2 eggs
2 tbsp water
1 tsp vanilla extract
Mints
Sift together flour, baking powder and salt; set aside.
Mix together butter, shortening, sugar and brown sugar. Add eggs, 2 tablespoons water and vanilla. Add sifted ingredients. Refrigerate 1 hour.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F.
Flour hands and shape chilled dough around each mint. Place 2-inches apart on lightly greased cookie sheets.
Bake in a preheated 350 degree F oven for 10-12 minutes.
Over the years we doubled the vanilla and used 1 cup butter instead of shortening and butter. YUMMY
