The time frame will depend upon your dehydrator and if it has a theromstat or is fan driven. Also it will depend upon how dense the item to be dried is plus the moisture content. This is one reason why I hestiate to tell anyone how long it will take to dry something. if your dehydrator did not come with a book I would call and get one because each machine can be so different. Most everything you dry will be feeling leatherly at least. Most fruits feel leatherly when dry. Vegetables tend to be more brittle. The foods will be a different feeling after cooling a bit so I would suggest you remove a piece and let it cool a few seconds and give it the feel test then. Another factor that enters in how long it takes is how many trays you are drying at once. Of course the more trays the longer it will take. I can't recall ever drying anything that has taken much over 12-14 hours and that has been drying 6 trays at once. I dried 6 trays onions the other day and these were exremely moist and it took around 13 hours. I like to place the dried food in either air tight containers or plastic bags and freeze it. this way, when I remove some to use if I don't stand the chance of getting moisture or anything in the container and letting it spoil the remainder.
