QUICK CRISPY CABBAGE
"This recipe is equally delicious made with red cabbage."
1 medium head green cabbage (about 1 1/2 pounds), shredded (about 7 1/2 cups)
1/2 cup milk
1 tablespoon margarine or butter
1/2 teaspoon salt
Dash of pepper
Heat cabbage and milk to simmering in 10-inch skillet over medium heat, stirring frequently. Cover and cook about 5 minutes, stirring occasionally, until cabbage is crisp-tender. Stir in margarine, salt and pepper.
To cook in a Microwave:
Decrease milk to 1/3 cup. Place cabbage, milk, margarine, salt and pepper in 2-quart microwavable casserole. Cover tightly and microwave on high 6 to 7 minutes, stirring after 4 minutes, until cabbage is crisp-tender.
Makes 4 servings
