DRIED APRICOT BREAD
FOR A 1 1/2 POUND LOAF:
1 cup plus 1 tablespoon water
1 tablespoon butter or margarine, softened
3 cups Gold Medal Better for Bread flour
1 tablespoon sugar
1/2 teaspoon ground nutmeg
1 1/2 teaspoons salt
2 1/4 teaspoons Fleischmann's bread machine yeast*
2/3 cup dried apricots, cut into fourths
FOR A 2 POUND LOAF:
1 1/4 cups water
2 tablespoons butter or margarine, softened
4 cups Gold Medal Better for Bread flour
1 tablespoon sugar
3/4 teaspoon ground nutmeg
1 3/4 teaspoons salt
2 1/4 teaspoons Fleischmann's bread machine yeast*
3/4 cup dried apricots, cut into quarters
Make 1 1/2 pound recipe with bread machines that use 3 cups flour, or make 2 pound recipe with bread machines that use 4 cups flour.
Measure carefully, placing all ingredients except apricots in bread machine pan in the order recommended by the manufacturer.
Select Basic/White cycle. Use Medium or Light crust color.
Add apricots at the beep signal or 5 minutes before the last kneading cycle ends. Remove baked bread from pan; cool on wire rack.
*The same amount of yeast is needed for both the 1 1/2 pound and 2 pound recipes.
1 1/2 pound loaf = 12 slices
2 pound loaf = 16 slices
