Recipe: Dulce de Leche

It is very dangerous to boil the can of condensed milk. I tried it once and thankfully the can did not explode, but it did swell! I calculated the recipe for Borden's condensed milk using the nutritional data on the back and I came up with:

2 1/3 cup whole milk
3/4 cup granulated white sugar

Boil this down until you have 21 tablespoons (about 1 1/4 cup). You'll probably have to do this over lower heat and stirring constantly so that the bottom doesn't scorch. Unfortunatley, if it scorches on the bottom, the whole thing will taste scorched. This approximately yields one 14 oz can of condensed milk.

You can then take this condensed milk and microwave it until you get the desired consistency. Also you could put this in a pyrex measuring cup and put into a boiling water bath, to simulate boiling the can of condensed milk. Or perhaps you could put the condensed milk into a double boiler until the right consistency is achieved.
