EASY APPLE COFFEE CAKE
"A buttery "crust" and a filling reminiscent of apple pie top this moist and light coffee cake."
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, lightly beaten
1 cup milk
2 tablespoons vegetable oil
2 large Golden Delicious apples, peeled, cored, and thinly sliced
1 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1/3 cup butter or margarine, melted and cooled
1/2 cup chopped walnuts
Mix flour, granulated sugar, baking powder, and salt in a large bowl. Add egg, milk, and oil; stir until well moistened.
Spoon batter into a greased and floured 13x9-inch baking pan, evenly smoothing top. Arrange apple slices in rows over batter.
In a small bowl, mix brown sugar, cinnamon, and butter; crumble over apples. Sprinkle with nuts.
Bake in a 350 degree F oven until cake begins to pull away from sides of pan (about 45 minutes). Let cool in pan on a rack for 10 minutes.
Serve warm or at room temperature.
