LEMON LIGHTNING CAKE WITH ORANGE GLAZE
"Made of pantry shelf items, this dessert goes together as quickly as its name implies. If you like, make the cake ahead and freeze it."
FOR THE CAKE:
3 cups packaged biscuit mix
1/2 cup sugar
1 (3 ounce) package lemon-flavored gelatin
4 beaten eggs
1/2 cup milk
1/3 cup cooking oil
FOR THE GLAZE:
1 1/2 cups sifted powdered sugar
1/2 cup orange juice
Ice cream (optional, for serving)
Half-slices fresh lemon (optional, for garnish)
In mixing bowl combine biscuit mix, sugar, and dry gelatin; set aside.
Combine eggs, milk, and oil; stir into dry ingredients till moistened. Beat vigorously by hand about 1 minute or till smooth. Pour batter into greased and floured 13x9x2-inch baking pan.
Bake in a 350 degree F oven about 25 to 30 minutes or till cake tests done. Cool 5 minutes.
Meanwhile, in a small bowl blend powdered sugar and orange juice till smooth.
Using a long-tined fork, poke holes all over top of cake. Pour orange mixture evenly over top.
Serve warm or cool with ice cream, or garnished with half- slices of lemon, if desired.
Makes 12 servings
