Recipe: Greek-Style Chicken with Garlic (using chicken pieces and potatoes) (1982)
Main Dishes - Chicken, PoultryGREEK-STYLE CHICKEN WITH GARLIC
4 medium potatoes, pared, cut into quarters*
1 cup chicken broth
20 cloves garlic, peeled, slightly crushed
1 frying chicken, cut up (about 3 pounds)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup olive or vegetable oil
1 medium onion, thinly sliced
2 tablespoons lemon juice
Heat potatoes and broth to boiling in small saucepan; reduce heat and simmer 10 minutes. Drain.
Stuff garlic cloves under skin of chicken pieces. Coat chicken with mixture of flour, salt, and pepper.
Saute chicken pieces and potatoes in oil until chicken is browned; place in shallow roasting pan. Top with onion; sprinkle with lemon juice.
Bake, uncovered at 375 degrees F until chicken is tender, about 50 minutes.
*TO SERVE WITH RICE INSTEAD OF POTATOES:
If desired, potatoes can be omitted and the chicken can be served with rice. Cook 1 cup rice according to package directions, using chicken broth instead of water. Stir 1 tablespoon minced parsley into cooked rice.
