EASY CHOCOLATE CHEESECAKE
FOR THE CRUST:
1 3/4 cups chocolate cookie or graham cracker crumbs
2 tablespoons sugar
1/3 cup margarine or butter -- melted
FOR THE FILLING:
2 packages (4 oz each) German sweet chocolate, divided use
2 eggs
2/3 cup corn syrup
1/3 cup heavy cream
1 1/2 teaspoons vanilla
2 packages (8 oz each) cream cheese, cubed and softened
Preheat oven to 325 degrees F.
TO PREPARE THE CRUST:
Combine cookie crumbs, sugar and margarine in 9-inch pie plate or springform pan until well mixed. Press into pie plate or onto bottom and 1 1/4 inches up sides of pan.
TO PREPARE THE CHEESECAKE:
Microwave 6 ounces (1 1/2 packages) of the chocolate in microwavable bowl on HIGH 1 1/2 to 2 minutes or until almost melted, stirring after 1 minutes. Stir until completely melted.
Blend eggs, corn syrup, cream and vanilla in electric blender until smooth. With blender running, gradually add cream cheese, blending until smooth. Blend in melted chocolate. Pour into crust.
Bake for 50 to 55 minutes or until firm. Cool on wire rack. Cover; refrigerate.
Just before serving, melt the remaining 1/2 package chocolate and drizzle over top.
