Easy Red Cabbage Soup

Comments: A simple soup to prepare but delicious nevertheless!
Servings: 8

1 onion, chopped
1/2 cup [125 mL] margarine
1 small red cabbage, shredded or chopped
1 tablespoon [15 mL] sugar
2 [10-ounce / 284-mL each] cans beef consomme
2 cans water
Salt and pepper, to taste
Chopped parsley, to taste

Brown chopped onion in melted margarine, over medium heat. Mix in cabbage and sugar; cook to soften cabbage. Pour in beef consomme and water. Sprinkle with salt, pepper and chopped parsley. Simmer for 20 minutes, before serving.
