Marie, any recipe that you would cook in a frying pan can be made in an electric skillet.

You can make all stir-fry recipes, burgers, eggs and bacon, one-dish meals; you can even roast foods by cooking with the lid to the electric skillet.

Here are some meals you might try:Skillet Stroganoff

INGREDIENTS

1/2 pound ground raw turkey
breast
1/2 pound lean ground pork
1 cup fresh rye breadcrumbs
1 tablespoon dried parsley
flakes
1/2 teaspoon dried tarragon
1/2 teaspoon onion powder
2 egg whites
Vegetable cooking spray
2 cups water
1 tablespoon beef-flavored
bouillon granules
1 (4-ounce) can mushroom
stems and pieces, drained
2-1/2 cups uncooked medium
egg noodles
1/2 cup low-fat sour cream
1/2 cup sliced green onions

Step 1
Combine turkey, pork, and next 5 ingredients
(breadcrumbs through egg whites) in a bowl,
and stir well. Shape mixture into 24 (1-inch)
meatballs.

Step 2
Coat a large nonstick skillet with cooking spray,
and place over medium-high heat until hot. Add
meatballs, and cook 6 minutes, browning on all
sides. Drain well. Wipe drippings from skillet
with a paper towel.

Step 3
Return meatballs to skillet. Add water, bouillon
granules, and mushrooms; bring to a boil. Stir in
noodles; cover, reduce heat, and simmer 10
minutes or until noodles are tender, stirring
occasionally. Remove from heat (to keep the
sour cream from curdling); stir in sour cream.
Sprinkle with green onions. Yield: 6 servings
(serving size: 1 cup).

Hawaiian Turkey Skillet Meal

INGREDIENTs

1 cup onion, cut into 1-inch cubes
1/2 cup EACH green and red pepper, cut into 1-inch cubes
1 tbsp. margarine
2 cups cooked turkey, cut into
3/4-inch cubes
1 can (15 1/2 oz.) pineapple
chunks in juice, drained and
juice reserved
1/2 cup orange juice
1 tbsp. lemon juice
1 1/2 tsp. cornstarch
1 tsp. EACH lemon pepper and
basil
1/2 tsp. salt
1 container (8 oz.) lemon
yogurt
4 servings cooked rice OR egg
noodles

In large skillet over medium-high heat, cook
onion and pepper cubes in margarine 3 to 4
minutes, add turkey cubes and cook 2 to 3
minutes until heated. In small bowl, combine
reserved pineapple juice, orange juice, lemon
juice, corn starch, lemon pepper, basil, and salt.
Stir into turkey mixture until thickened. Remove
turkey mixture from heat and stir in yogurt and
pineapple cubes. Return skillet to burner for 2 to
3 minutes until entire mixture is heated
throughout. Serve over rice or noodles. Cooking
tip: Yolk-free noodles, non-fat lemon yogurt and
salt-free lemon pepper may be used for those
with a restricted diet.

Tex Mex Skillet

3/4 yellow onion, chopped up
1 pkg. seitan (wheat meat), ground
1/4 cup chopped olives
2 cups corn kernels (frozen is okay)
2 cans stewed tomatoes
1 cup tomato sauce
1/2 cup brown rice
1/2 cup water
1 tsp ground cumin
1 tsp chili powder (increase or decrease to taste)
1 tsp cayenne (increase or decrease to taste)
1 tsp crushed red pepper (increase or decrease to taste)

Brown the onions, then throw in the seitan. "Brown" that for a minute or so,
then throw in all of the ingredients, stir a little bit, and cover. Simmer
for about 45 minutes (until the rice is cooked). This recipe makes about 6
servings. It's good hot or cold!
