GRILLED ASPARAGUS WITH PARMESAN CHEESE
1 1/2 pounds fresh asparagus*
1/4 cup olive oil
1 to 2 green onions, trimmed and minced
1 tablespoon chopped fresh tarragon leaves
2 teaspoons chopped fresh parsley
Salt and pepper (to taste)
1/4 cup grated Parmesan cheese (for serving)
Either snap tough stem ends off asparagus or cut them off. Using vegetable peeler, starting about 2 inches below tip, peel off thick outer skin. Place stalks in shallow non-aluminum dish.
In small bowl, stir olive oil, green onion, tarragon and parsley. Pour over asparagus. Toss to coat. Cover and let stand at room temperature 30 minutes.
Heat barbecue grill.
Place asparagus on barbecue vegetable grate (a metal grate or basket designed to prevent vegetables from falling through the standard barbecue grate). Cook, turning once, until lightly browned, about 6-8 minutes. Turn again and allow to grill until cooked tender-crisp. If asparagus begins to char, move to outer edges of grill.
TO SERVE:
Transfer to serving dish and immediately sprinkle with salt, pepper and Parmesan.
*Grilling times vary depending on thickness of asparagus, so watch carefully. It's easier to grill thicker stalks than pencil-thin spears.
