Recipe: Fat Free Oatmeal Cookies (using applesauce, no eggs) and Fat Free Chewy Chocolate Cookies (using egg whites)
Desserts - Cookies, Brownies, BarsHere are two recipes I collected. Not entirely "fat-free" as the fat is in the chocolate.
FAT FREE OATMEAL COOKIES
1/4 cup brown sugar
1/4 cup white sugar
3/4 cup unsweetened applesauce
1 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1 cup rolled oats, uncooked
1/2 cup raisins, chocolate chips and/or chopped nuts
Preheat oven to 350 degrees F.
In medium bowl, stir together sugars and applesauce.
Sift together flour, baking powder, salt and cinnamon. Stir into applesauce mixture. Add oats. Add raisins, chocolate chips and/or nuts. Stir until combined. Drop by teaspoonful onto greased cookie sheet.
Bake 10 minutes. Cool slightly before removing from sheet.
Supposedly makes 24 cookies but I never get that many.
FAT FREE CHEWY CHOCOLATE COOKIES
Non-stick cooking spray
1 1/2 cups flour
1/2 cup sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup corn syrup (light or dark)
3 egg whites
Chocolate chips (add as many as you would like)
Preheat oven to 350 degrees F. Spray cookie sheet with cooking spray.
In large bowl, combine flour, sugar, cocoa powder, baking soda and salt. Stir in corn syrup and egg whites until blended (dough will be thick and slightly sticky). Stir in chocolate chips. Drop by rounded teaspoonfuls onto prepared cookie sheets.
Bake in 350 degree F oven 7 to 9 minutes or just until set (cookies will be soft when pressed). Do not over bake. Cool on wire rack.
Makes 2 1/2 dozen cookies
