Recipe: Fiesta Chicken

Fiesta Chicken
Source: Cookbook USA

5-6 chicken breasts, boned
1 (4 oz.) can green chili peppers, chopped
Taco seasoning
1 1/4 c. crushed cheese flavored crackers
4 chopped green onions
1/2 pt. heavy cream
1 1/2 tsp. chicken bouillon granules
1 1/2 c. shredded Cheddar & Monterey Jack cheese, combined

Mix taco seasoning and crushed crackers. Roll chicken in mixture and lay chicken in 13 inch baking dish. Mix cheeses, onion, green chilies, heavy cream, bouillon and about 1/4 cup milk. Pour over cheese. Bake covered with foil for about 30 minutes at 350 degrees, uncover and bake about 10-15 minutes or until done.
