I make cucumbers and onions the way my Mom always made them. I don't use a jar, but you could I guess.
CUCUMBERS AND ONIONS
2 medium size cucumbers
1 large onion
apple cider vinegar and ice cold water
salt and pepper to taste.
Peel and slice cukes, medium slice. Peel and slice onion (I cut the onion in half vertically and then slice) again medium slice.
Put into a bowl that can be tightly covered, salt and pepper to taste. Add some cider vinegar, not too much at first, then add about the same amount of ice water. Solution should eventually cover cukes and onions.
Mix all together and taste the vinegar water solution, to see if you need more of either one. This is kind of a personal taste thing, some people like it more sour than others.
If it's too sour add more ice water, not sour enough more vinegar.
Cover tightly and refrigerate several hours before serving.
These will last for a few days, but the longer they sit the flavor of the vinegar intensifies in the cukes and onions.
