The other day I bought a pineapple at the grocery store. The tag on it said, "Super Sweet." The greengrocer assured me that it was guaranteed to be sweet. Well, I got it home, cut it up, tasted it, and couldn't get the pucker off my face for about a minute! It was very tart and unpleasant. I remembered that I had made some symple syrup (1 cup sugar, 1 cup water, boiled until the sugar is dissolved and then cooled), so I just poured some of the syrup over the pineapple and let it macerate overnight. It was delicious! So here's a good fix for tart, underripe pineapple.
