Recipe: Fresh Herb Turkey Loaf

Fresh Herb Turkey Loaf

Yield: 6 servings

2 egg whites
1 cup rolled oats
1/2 cup red bell pepper, chopped
1/3 cup celery, finely chopped
1/4 cup onion, finely chopped
2 tbsp fresh parsley
1/2 tsp basil
1/4 tsp black pepper
1 lb ground turkey breast, skinned

Preheat oven to 350.

In a medium bowl, combine all ingredients except turkey. Add turkey and mix well. Mold turkey mixture into a loaf pan.

Bake 40 to 45 minutes or until no longer pink. Remove from oven, pay dry with paper towel, and cut into 6 slices.
