Recipe: Fresh Tomato Sauce (crock pot)

FRESH TOMATO SAUCE

Double recipe for 5-quart Crock-Pot.

4 cups peeled, seeded, and diced fresh tomatoes
1 (6 oz) can tomato paste
1 medium onion, minced
3 cloves garlic, crushed
1 1/2 teaspoons basil
1 teaspoon sugar

Combine all ingredients in lightly oiled Crock-Pot.

Cover and cook on Low for 6 to 12 hours or on High for 4 hours. If a thicker sauce is desired, remove cover and cook on High until sauce is reduced.

This is good used in any recipe calling for tomato sauce.

Makes about 5 cups
