FROSTED PUMPKIN SQUARES
3/4 cup butter or margarine (1 1/2 sticks)
2 cups white granulated sugar
1 (16 oz.) can pumpkin puree (not sweetened pie filling)
4 eggs
2 cups flour
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground nutmeg
1 cup chopped walnuts
Cream Cheese Frosting (recipe follows)
Mix butter and sugar with electric mixer on medium speed until light and fluffy. Blend in pumpkin and eggs. Mix in combined dry ingredients. Stir in walnuts. Spread into greased and floured 15x10x1-inch baking pan.
Bake at 350 degrees F for 30 to 35 minutes or until wooden pick inserted in center comes out clean; cool.
Spread Cream Cheese Frosting onto cooled cake. Cut into squares.
CREAM CHEESE FROSTING
1 (8 oz.) pkg. cream cheese, softened
1/3 cup butter or margarine
1 tsp. vanilla
3 cups sifted powdered sugar
Mix cream cheese, butter and vanilla in large bowl with electric mixer until creamy. Gradually add sugar, mixing well after each addition.
Makes 2 dozen
