ROSIE'S BAKERY HOT FUDGE FILLING
Source: Rosie's Bakery All-Butter, Fresh Cream, Sugar-Packed, No-Holds-Barred Baking Book
Makes 3/4 cup
2 oz unsweetened chocolate
6 tbsp hot water
5 tbsp plus
2 tbsp butter, unsalted
1 1/2 tsp sugar
1/2 tsp vanilla extract
Place all the ingredients except the vanilla in the top of a double boiler placed over simmering water and cook uncovered, stirring occasionally, until the chocolate is melted and the sugar is dissolved, 30 minutes. The mixture will be smooth and velvety. Pour the fudge into a small bowl, stir in the vanilla, and refrigerate until the mixture is thick and of spreading consistency, 2 hours.
