FUDGE SURPRISES
The surprise in this candy is the baby-food prunes that substitute for fat and give the fudge a melt-in-your-mouth, smooth texture. Calories, fat and cholesterol were reduced by:
Using skim instead of whole evaporated milk
Replacing most of the butter with baby-food prunes
Reducing the amount of sugar
Reducing the amount of walnuts

2 tablespoons butter
2 1/2 cups sugar
2/3 cup evaporated skim milk
1 (12-ounce) package semisweet chocolate chips
1 (2 1/2-ounce) jar baby-food prunes
1 (7-ounce) jar marshmallow creme
1/2 cup chopped walnuts
1 teaspoon vanilla
Line a 13x9x2-inch baking pan with wax paper, extending the paper over the edges of the pan. Set the pan aside.
In a large saucepan, melt the butter. Stir in the sugar and milk. Bring the mixture to a boil over medium heat, stirring constantly. Boil for 5 minutes, stirring constantly.
Remove the saucepan from the heat and slowly stir in the chocolate chips. Stir until the chocolate melts. Then stir in the prunes, marshmallow creme, walnuts and vanilla until well combined.
Spread the mixture in the prepared pan. Chill in the refrigerator until firm.
To serve,use the wax paper to lift the fudge from the pan. Then cut the fudge into pieces.
