Recipe: Full Moon Restaurant Tortilla Soup and Cheese Chicken Tortilla Soup like Applebee's
Soups I don't know if these are close to what you are looking for, but may be worth the try. Enjoy.
FULL MOON RESTAURANT TORTILLA SOUP
Source: Full Moon Restaurant - Tulsa, Oklahoma
4 oz. butter
4 oz. flour
1/2 gal. herb infused chicken broth
1 C. salsa
8 oz. shredded Cheddar jack cheese
8 oz. cooked, cubed chicken
Seasoning
1 C. cream
Garnish
Fried tortilla chips
Guacamole
Fresh cheese
Melt butter then add flour. Cook for about 7 minutes over medium heat stirring constantly.
Add hot chicken broth in 2 intervals. Add salsa, chicken, and cream. Simmer for 15 minutes stirring frequently. Add seasoning of your choice. Remove from heat and whisk in the shredded cheese.
Serve and garnish with the guacamole, tortilla chips, shredded cheese, and sour cream if desired.
Cheese Chicken Tortilla Soup like Applebee's
Prep. Time : 0:45
Serves : 10
1 cup chopped yellow onion
2 tsp. minced garlic
2 Tbls. vegetable oil
4 cups chicken stock
15 oz. can tomato puree
1 tsp. granulated sugar
1/2 tsp. salt
1 tsp. Worcestershire sauce
1/2 cup hot sauce - optional
1/4 cup chopped green pepper - optional
1 Tbls. minced jalapeno pepper - optional
1 tsp. chili powder - optional
1/4 tsp. pepper - optional
4 Tbls. all-purpose flour mixed with 1/2 cup water
1 Lb. cooked chicken - cubed
1 cup heavy cream
1/4 cup fat free sour cream
8 oz. processed cheese - cut in 1" cubes
(10) 6" corn tortillas - cut in 1/4" strips
chopped cilantro - optional
-Saute garlic and onions in oil in large pan or Dutch oven until soft.
-Add next 10 ingredients to pot, bring to a boil, reduce heat, and simmer 20 minutes.
-Fry tortilla strips in oil OR spray with non-stick cooking spray and bake in 400 degree oven until crisp. Sprinkle with salt if desired.
-Whisk flour/water mixture into soup.
-Bring to a boil, reduce heat, simmer for 5 minutes.
-Add chicken and simmer for 5 minutes.
-Add cream, sour cream, and cheese; stir until cheese is melted.
-Pour soup into bowls, pile tortilla strips into a "haystack" shape on top of the soup, garnish with cilantro.
(1) VISITOR COMMENT : "After trying several Tortilla Soup recipes, I have finally found the ONE that beats all! This soup was so good, my family devoured it. I am making it for the second time in a month, and this time am going to double it. Also this is the first time I have "made" my own tortilla strips, and they are wonderful! Just as good as the restaurant kind, and they keep well and are crispy for days when kept in a ziplock bag.
