Recipe: Potato Chowder (with bacon and carrots)

POTATO CHOWDER

3 strips bacon
2 cups diced raw potatoes
1/2 cup sliced fresh carrots
1 1/4 tsp. salt
1 tbsp. instant minced onion
2 cups boiling water
1/4 tsp. ground sage (optional)
Dash ground black pepper
1/4 tsp. paprika
1 tsp. parsley flakes
2 tbsp. flour
2 cups milk, divided use

Fry bacon until crisp in a 2 or 3-quart saucepan; remove bacon; set aside.

In a saucepan combine potatoes, carrots, salt, onion, and boiling water. Cover. Cook until vegetables are tender, 10 to 15 minutes.

Add seasonings. Blend flour with 1/4 cup milk until smooth. Add with remaining milk to the vegetable mixture, stirring constantly. Cook until slightly thickened, stirring occasionally.

Crumble bacon and sprinkle over soup.

Makes 4 to 6 servings
