Recipe: Tuscan Garlicky Bean Soup

TUSCAN GARLICKY BEAN SOUP

1 lb. dry Great Northern Beans
1 qt. water
1 qt. beef broth
3 Tablespoons olive oil
2 garlic cloves, minced
4 Tablespoons chopped parsley
Olive oil
1/2 teaspoon pepper
2 teaspoons salt

In large soup pot place beans and cover with water. Bring to boil. Cook 2 minutes. Remove from heat. Cover pot and let stand 1 hour.

Drain, discarding water. Mix beans, 1 qt. fresh water and beef broth in a slow cooker.

Saute garlic and parsley in olive oil in saucepan. Add to beans with pepper. Cover.

Cook on low 8-10 hours, or until beans are tender. Add the salt and serve.
