Recipe(tried): Fun-Fetti Cookies for a Crowd - EASY (using cake mix)
Desserts - Cookies, Brownies, BarsGreat, simple, easy cookie recipe. Hi-tail it to favorite grocery store, purchase 1 box of Pillsbury Holiday Fun Fetti cake mix, YES, CAKE mix. See side panel to turn into cookies. If not on your box, here's recipe, way too easy & good.
FUN-FETTI COOKIES FOR A CROWD
1 box Pillsbury Holiday Fun-Fetti cake mix
2 eggs
1/3 cup vegetable oil
holiday candy pieces
about 1/4 cup flour (if needed)
1 container Fun-Fetti Frosting
Preheat oven to 375 degrees F. Coat a cookie sheets with cooking spray or line with parchment paper.
Combine dry cake mix, eggs, oil. Stir with a spoon; add holiday candy pieces at this time. I did find I had to add a bit less than 1/4 cup of flour as dough felt greasy, it did the job. Shape dough into 1-inch balls and place on prepared cookie sheets, flatten to about 1/4-inch thickness with a glass bottom that has been dipped in flour to avoid sticking.
Bake approximately 5-7 minutes, being careful not to overbake. Cool.
Frost cooled cookies with some Fun-Fetti frosting.
This worked so well, I tried it with banana cake mix & drizzled melted chocolate over tops when cool. Same great result!
