Recipe: Garlic Broth (vegetarian)
SoupsGARLIC BROTH
2 heads garlic, separated into cloves, peeled
2 quarts water
1 tablespoon olive oil
1 bay leaf
2 sprigs fresh thyme (or 1 tsp. dried)
4 sprigs fresh parsley
pinch dried leaf sage
2 teaspoons salt
Combine all the ingredients in a stockpot. Bring to a gentle boil, then cover and reduce the heat. Simmer for 1 to 2 hours. Strain.
Use with your own inventions, or when a recipe calls for stock.
