Recipe(tried): Gingered Beets, California Style

A really good recipe from my Vegetarian daughter:---

GINGERED BEETS

1 1/2 lb. small beets, trimmed
1/3 cup raisins
2 Tblsp. unsalted butter
1 1/2 tsp. minced ginger root
1 Tblsp. sugar
1 tsp. red wine vinegar
1 tsp. finely shredded lime peel

Cover beets with cold water and cook at a simmer, uncovered, until barely tender, about 25 minutes. Save just enough beet water to cover raisins in a small bowl. Let stand 10 minutes. Meanwhile, drain beets under cold water, remove skins and cut into slices. Drain raisins and reserve. Melt butter in a large skillet over medium heat. Stir in ginger and cook five minutes. Add beets and raisins, sugar and vinegar. Cook ubntil warmed through. Sprinkle with lime peel and serve. Serves four.
