ASPARAGUS VINAIGRETTE
1 bunch asparagus (approx 20 spears)
2 Tbsp. vinegar
1/2 tsp. salt
1/4 tsp. ground black pepper
1/2 cup olive oil
Steam asparagus 5-8 minutes depending on size of spears. Asparagus should be tender but crisp when pierced with a fork.
Whisk together vinegar, oil, salt and pepper. Pour over asparagus (hot or cold); toss to coat.
