Recipe(tried): Grilled Turkey Burgers, Vegetable Cheese Tortellini, Strawberry Cream Dessert

For dinner tonight, we had grilled turkey burgers, vegetable cheese tortellini, and strawberry cream dessert. It was a night for some good old comfort food, because it's back to school tomorrow! Where did my summer go? Two of the recipes are adapted from an old Taste of Home magazine, and the strawberry cream dessert is from who knows where. It must have come from someone who owns stock in Cool Whip, because it uses a whopping 24 oz. of it! My husband said he thought he died and went to Cool Whip Heaven! It was a cool, creamy dessert, and the yogurt and jello form a rather mousse-like layer, that's just very easy to eat on a muggy day! Hope you all had a great Sunday!
Grilled Turkey Burgers
1 egg, lightly beaten
2/3 cup dry bread crumbs
1/4 cup finely chopped green pepper
2 green onions, finely chopped
2 TBSP. milk
Salt and pepper to taste
1 lb. ground turkey
1 1/2 lbs. ground round
2 TBSP. orange marmalade
Swiss cheese, sliced
Onions, sliced
Tomatoes, sliced
Lettuce
Ina bowl, combine the first 5 ingredients. Add salt and pepper. Add turkey and ground round, and mix well. Shape into patties.
Grill over medium heat 10 minutes, turn, and brush with orange marmalade. Grill another 10 minutes or until done. Serve on buns with cheese, onions, tomatoes, and lettuce.
Vegetable Cheese Tortellini
8 cups water
1 pkg. (16 oz.) frozen California blend vegetables
1 pkg. (16 oz.) cheese tortellini
1 jar Ragu Double Cheddar Cheese sauce
Pepper to taste
In a large saucepan, bring water to a boil. Add frozen vegetables and tortellini. Cook for 12 minutes. Drain. Return veggies and tortellini to pan, and pour cheese over. Mix well. Pepper to taste.
Strawberry Cream Dessert
2-1/4 cups graham cracker crumbs
6 TBSP. sugar
10 TBSP. butter, melted
1 (8 oz.) pkg. cream cheese, softened
1 cup powdered sugar
3 (8 oz.) cartons Cool Whip, divided (yes, three!)
1 pkg. (3 oz.) strawberry jello
cup boiling water
1 carton (8 oz.) strawberry yogurt
1 can strawberry pie filling
Combine the first 3 ingredients. Pat into a 9X13 glass dish. Refrigerate for 15 minutes.
In a large bowl, beat cream cheese and sugar until smooth. Whisk in 8 oz. (1 carton) of Cool Whip. This mixture will be a bit stiff. Spread mixture over crust.
In a large bowl, dissolve jello in boiling water. Whisk in yogurt and 1 more (8 oz.) carton of Cool Whip, blending well. Pour over the cream cheese mixture, and refrigerate for 1 hour.
Spread the remaining carton of Cool Whip over the top. Drop spoonsful of strawberry pie filling on top of the Cool Whip. Cover with plastic wrap and refrigerate overnight.
Can do with any jello/yogurt flavors - lemon jello, lemon yogurt, lemon pie filling, etc.
