Recipe(tried): Ham and Asparagus Crepes

Main Dishes - Pork, Ham
Here is one you may enjoy as well Jo, as you can do yours special w/o ham!

Make crepes as per your favorite recipe or recipe book or even some of the pancake mixes have recipes on them for crepes.

On each crepe lay 1 rather thin slice of ham (it will be about the same size as the crepe)

Lay 2 asparagus spears side by side and roll up the crepe (cut off bottom of spear and blanche beforehand)

Place in a baking dish and repeat (kinda like doing an enchilada) till you have made enough

Drizzle your favorite cheese sauce over, maybe a little wine ...

Cover & bake till warmed through

sounds inviting huh?? and in case you don't know crepes REALLY are easy! while you are in the crepe making mode you can do ahead and freeze extras.
