HASH RANCHERO
6 ounces lean ground beef
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 (10 ounce) can tomatoes, well drained (3/4 cup)
1 cup cooked rice
In a small oven-proof skillet saute beef, onion, green pepper, and seasonings until meat is no longer pink and vegetables are tender. Stir frequently to crumble meat.
Add tomatoes and rice.
Bake at 350 degrees F for 20 minutes or until thoroughly heated.
Makes 2 servings
