Recipe: Salmon with Artichokes (serves 2)

SALMON WITH ARTICHOKES
For 2. Light, clean, delicate.



12 ounces salmon, grilled, baked, or shallow-fried
Olive oil
4 marinated artichoke hearts, sliced in half
Fresh parsley leaves
Fresh dill
Lemon juice

Flake the cooked salmon, then warm in a little olive oil in a shallow nonstick pan.

Add the artichokes, then season with whole parsley leaves, a little chopped dill, and a squeeze of lemon.

Makes 2 servings
