Recipe: Hawaiian Moon Drops

3 cups Flour 2 Eggs
1 tsp Baking Powder 1 tsp Vanilla
1 tsp Baking Soda 1/4 tsp Lemon Extract
1 tsp Salt 2/3 cup drained Crushed Pineapple
3/4 Cup Brown Sugar 1 Cup Chopped Nuts
2/3 Cup Shortening 2 Cups Coconut (toasted)
1/2 Cup Sugar
Cream: shortening, sugars and eggs. Add dry ingredients. Stir in pineapple
nuts and 1 cup coconut. Drop by tsp on greased and lightly floured cookie
sheet. Bake at 375 for 12-15 minutes.
Frost with lemon frosting and dip tops in coconut:
make half batch of buttercream frosting using lemon juice or lemon extract instead of milk.
To toast coconut: put on cookie sheet in 350 oven, stirring frequently till gold
brown......watch carefully once it starts browning it goes quickly.
