HEALTHY PUMPKIN BREAD
1/2 c. oil
1/2 c. mayo
1 1/2 c. sugar
4 eggs
2 c. canned pumpkin
3 1/2 c. whole wheat flour
1/2 tsp. baking powder
dash of salt
2 tsp. baking soda
1 tsp. nutmeg
2 tsp. cinnamon
Beat together oil, mayonnaise and sugar. Add eggs and
beat again. Set aside. Sift together flour, baking powder, salt, baking soda, nutmeg and cinnamon. Add pumpkin to flour mixture. Mix well, adding other ingredients a little at a time, until well mixed. Pour into 2 lightly greased loaf pans.
Bake at 325 degrees for 1 1/4 hours.
